1. It's fake. They are playing roles - it's scripted. No one is actually related.
2. A percentage of the population enjoys the fantasy of that taboo being broken. Thus, it improved sales.
3. The improved sales weren't significantly counteracted by non-incest people avoiding those titles. Most buyers could enjoy the couple having sex without worrying much about the story lines.
4. There's always been a struggle to keep older actresses employed, and, to a lesser degree, to justify 50-year-old guys banging 19-year-old girls. And, again, it gives women who would have otherwise aged-out a chance to take roles where they play the mom or the coach or the therapist.
So, the bottom line is that it exists because it increases profits for the porn producers, and also solves other problems for them. If it didn't do those things, then the idea would be dropped, as many other less-successful ideas have been. Porn is a hyper-competitive market, so producers do what works, and abandon anything that doesn't.
