Guys have varied preferences when it comes to butts. As long as there is some sort of distinguishable (and symmetrical) difference in height in the general region from a girl's lower back to her upper thighs, she's got a good chance of finding a guy who finds her butt to be perfect. While most guys DO prefer curvy and round, not all necessarily prefer big. Some guys prefer moderate, firm, and condensed packages. Some guys prefer big o'le soft, jiggly, juicy booties. Those are just two examples.
As for why... well... you might as well ask why anyone is attracted to anything. These things are mostly biologically hardwired into us. There's more to it than just that though. From a sexual standpoint, all of the different "shape/thickness/volume" configurations have their advantages and disadvantages in the bedroom. Visually, a nice ass (which is a subjective term that varies from guy to guy) greatly contributes to a girl's overall physical femininity.

Some guys love t*ts, I love ass. I love t*ts too, but asses are better to me. I think it accentuates a girls feminine features. It goes with the wide hips, hour glass figure. Its opposite of a guy and is just one of the many things that make women sexy. Thongs and booty shorts show it off and make it look great. Most pants and skirts also are great for showing the form of it. Small and flat butts just don't seem as feminine to me. They can still be nice if they are tight and have a good shape, but a nice, big, round ass that bounces is amazing. between a narrow waist and thick thighs, the ass and its proximity to the vagina is beautiful to see.
Evolutionary theories say that men are attracted to big boobs and wide hips because it shows fertility and an ability to have children easily. I think that may contribute some to the fasination with big asses, But I think that they are just beautiful. There isn't much better than a girl with a nice big ass that knows how to shake it.
It's not about having a big butt to guys it's about shape and proportion

"Perfect" ass equates fertility, and it's deeply ingrained in a guy's genes to look for women with youthfulness (big boobs, fair and smooth skin, big butts) to ensure that they will rear their kids successfully.
I have been cut off mid sentence when I saw nice ass before, I don't know why I think they are so hot to me but damn they are. Of course, men are usually more visual than woman anyways, so we get turned on easier by defined features of the opposite sex. Plus the female body is awesome

When I see a bubble butt and big ass, I think doggystyle and all that cushion from behind. Yes it’s sexual but that’s my preference and the reason I married a beautiful woman with the curves I desire. I know many friends who think a big ass is undesirable and want a girl with a tiny waist and tiny petite figures but to me that looks no different than a male body and I like to see the difference.
