Where do you draw the line between self defence and retaliation?

I shared this opinion as a reply somewhere else but I want to share it here too.

What if George swings his fist at Jerry but misses and Jerry knocks him out to prevent George from trying to land another hit. I don't think Jerry is in the wrong because he wanted the violence to end and protected himself. If Jerry had retaliated against George then he would have unnecessarily kept the fight going out of anger. Self defence is okay but I don't think retaliation is.

Just like the asker who inspired this question, I ask this in regard to the Christian phrase to "... turn the other cheek".
