Here's a thought: what would happen if an animal suddenly mutated to be incredibly strong, fast, and durable, with sharp teeth and powerful jaws coupled with the intelligence and mobility of a monkey? It also would have the quills of a porcupine, the stench spray of a skunk, and the ability to swim and fly. A super predator, in short.
Well, that animal would be very successful in hunting, since few things would be able to evade it. It would pass its traits down to its offspring, and before long the area would be full of them. Then all the prey animals would be wiped out, and the species would begin the long, slow, painful slide into extinction, since it had no more food. A super prey animal would avoid all the predators and likewise eat its way into starvation. A stable ecosystem requires balance; predators need to eat and prey needs to be eaten.
Would you rather be raised out in the wild and spend your entire life dodging coyotes, or be raised in a controlled, safe, and comfortable environment, knowing that you'll eventually be taken out and killed quick and cleanly? Granted, that's not really how we raise most of our livestock, but that would probably change if we could talk to them.
Go to your library and pick up a copy of Watership Down (the book; the movie, while generally a good adaptation, leaves out much of the world-building and most of the light-hearted stuff, and comes across MUCH harsher as a result). Reading it will do you good.
The ability to talk doesn't have any consequence in terms of the food chain. Predators, including humans, are at the top. Hunting, as long as it is done respectfully, maintains a proper balance. Hunting too little and hunting too much affects it negatively. So, yeah, I think most people would still eat an animal for the sake of survival. Plus, animals already talk in their own way but they are still eaten by other animals.
Yes I would still eat them but I would enforce harsher ethical boundaries on when its ok to eat them and how to get them, like give them a happy life on the farm and only eat them when they die of old age or other ways. Be creative on how you harvest them for food, while giving them a happy life.

My father used to keep a few animals. They all had names and each had a unique personality. The thing they all had in common was they all were delicious.
