Because the UK presumably wants a deal. If you're gonna make a deal, telling the other party to fuck themselves is not particularly the best tactic. Also, EU nations obviously can veto whether the EU wants to go along with a stalled Brexit. Basically, the reason you can't tell them to fuck off is because the UK wants a deal. To really answer your question. I don't think the people understand what they voted for 2 years ago. I don't think they understand the implications today. The government really should be the parent telling there child no you can't have your way. All members of the EU have to agree with the EU going along with longer Brexit negotiations. Technically speaking, a minor nation such as Greece could effectively block any longer negotiations, just like Spain threatened to demolish the negotiations last year.
