Often there can be a conflict going on the guy's head. If he finds you attractive and he's single then he is interested in more than friends. But he might be too shy or too much of a gentleman to flirt with you, and it could come off as him wanting to be just friends. He could want to be more than friends, but you won't see that in him because he's shy, too much of a gentleman, has butterflies, or something. He won't take a risk.

On the other hand if a guy just wants to be friends he is probably willing to take risks in his behavior around you. Since he knows you are not a candidate for a potential relationship he might flirt with you a lot and be funny just because he's not afraid. He might also ask you to come to parties or hang out with him in different places on a regular basis because he is not restraining himself around you anyway. Some guys get butterflies when they like a girl, but you could get the impression he wants to be more than friends because he doesn't have the butterflies around you.

It's mixed signals I know.
