I think the number of guys who like quiet girls is roughly equal to the number who like outspoken types. You probably see the outspoken relationships more because they are, well, outspoken. Quiet girl relationships I imagine are far more discrete.
So some guys like quiet girls, but some don't. The main problem with quiet girls though is that often times a guy can't tell if a quiet girl is interested in him, so this might cause him to give up on her. It can be pretty frustrating.
i think the most important thing is to be yourself wether you are quiet ot outspoken because if your not being yourself they will see staight through it . if a guy doesn't like you because your too quiet/ too loud then he obv doesn't like you for who you are . in other words he's sooooo not work it !
