I think the sex talk is called 'the birds and the bees' because of their major role in reprodcution. Flowers need bees to spread the pollen around, birds eat fruit and poop the seeds all over the place to grow more trees. Plus bees are in a colony system where there's a queen, and birds mate and have one mommy and one daddy. It all comes back to reproduction and I think talking about 'the birds and the bees' became a nice G-rated way to say "we're gonna talk about sex". This is all just my personal theory as I have no real basis for any of it.

"The birds and the bees" is a nice clean way of saying dating and sex. Most often it's used in reference to explaining sex & babies to children. For example "I have to talk to my daughter about the birds and the bees." It's often used when people don't want to talk about what they are actually talking about. Like when people are afraid to talk openly about sex.
