When looking at dreams, I would say not to look too close. There are a lot of people that study them, and a lot of studies on them, and honestly, no one can really agree on what they are.
Some think that they are our minds trying to tell us what we want. Other think they foretell the future, and many think that it's just us seeing our brain sort all the information of the day. I dunno.
I tend to think that it's a combination, and possibly if you are dreaming of a girl that you have never met, it could mean an anxiety of what you don't know about the girl that you are with. You know it's her, but it doesn't look like her.
Or, deep down you might know that this isn't the girl for you, and you are seeing/feeling what you would really want in a relationship.
Or perhaps you were thinking about doing things with your girl, and an image of another person you saw somewhere (without realizing it) popped into your head, and as you woke up, this dream is simply the visual structure that your brain gave to all those thoughts.
Seriously, who can know.
What I can say for certain, is that if a dream is really making you think, and ponder, then THAT feeling is what is important and what you should explore rather than the dream. For some reason you feel it's significant, so you should investigate those feelings.
