I believe it comes from that fact that most wine glasses or snifters do not have enough glass for all 4 fingers, so it is simply best to stick out the pinky finger.0
It was once taught as a sign of good breeding, etiquette, class, and refinement. Generally used only in English high tea, or with wine and champagne glasses.
