Merry Christmas and happy holidaysstring the two together
I say Merry Christmas. If they say something back like Happy Hanukkah then I just repeat what they said. If they get offended, tough cookies.
I think any of them are fine. They all mean the same thing when it comes down to it: "enjoy your holiday!" But since so many people are so touchy about it I find "happy holidays" to be the best since it's very general.
