Why is there so much second-guessing involved in a date?

If you've managed to ask a person out, it seems clear that you're interested in them. If they accept, it seems clear that they're interested in you. Now assuming that you both actually show up, why would there still be uncertainty about a person's interest?

I'm trying to figure out why that feeling of uncertainty still lingers through the first few dates. I've experienced it when you exchange info and promise to contact each other to set something up, but why on the date itself?
