Would you quit a job right after starting it if you got hired somewhere better?

What would you do if you'd accepted a near minimum-wage job just because you couldn't find anything else... but the very next day after you accepted it, you found out you got an interview with your dream job?

Would you continue the hiring process and paperwork for the not-so-good job and then quit if you got hired for the dream job? Or is it best to stall on starting work at the not-so-good job to avoid having to quit right away?

The not-great job is guaranteed work and the other is not. So how would you handle this situation?
