Lets start from the back, for dessert it would be nice to have crème brûlée. Its really light so perfect for a 3 course meal.
Aligot could be your main starch dish and you can combine it with a sausage to kill 2 birds with 1 stone.
its basically mashed potatoes with melted cheese (real cheese, not the processed one)
As a starter you can have a salami platter.

I'm just going to give you some options, but be sure and look up the recipes and watch some videos on Youtube or elsewhere to help guide you if you're more of a visual learner.
Starter: Escargot, Niçoise salad, Mesclun Greens with Sherry Vinaigrette, or a Charcuterie Platter
Main Course: Poulet Basquaise, Blanquette de Veau, Hachis Parmentier, Steak Tartare, or Cassoulet... starch and veg on the dishes that do not have them outright can be just about anything steamed, baked, broiled, boiled, grilled, etc.
Dessert: Pots de Crème, Crème Brulee, Tarte Tatin, Creme Caramel, or Crepes with Warm Fruit
