There are restaurants around here that won't cook a well done steak, the chef refuses.
I don't understand why people would get well done steak. I -can- understand not liking rare steak. But that just means... you don't like steak, which is fine.
Basically you want well cooked meat, aim for the joint cuts, they have more flavor, start tough and then break down with low and slow cooking. Delicious!
Most expensive steaks are expensive solely because they're very tender when rare. They actually aren't especially flavorful relative to cheaper pieces of meat.
