  • Depends how much time and money I'm willing to invest into it. If I wanna make something quick, I'll go for spaghetti aglio e olio. It's super simple to make, easy to plate up so it looks pretty fancy and it tastes good as well. Also it's safe for vegetarians and vegans so that's a bonus.

    If I REALLY want to impress them I'll roast a rack of lamb, make some red wine sauce for it, then serve it with some mashed potatoes, mushrooms and veggies. Couldn't find an accurate pic but something like this.

    It's a breast of chicken stuffed with fresh lobster meat and Swiss cheese, breaded and baked and then topped with a lemon herb cream sauce. I stole it from a restaurant I've visited in my travels.

  • For a light appetizer before, I make gluten free croissants with raisins and my own hummus. We usually snack on that while I make a super easy one pan meal - salmon, potatoes, veggies, lemon and spices. (If he doesn't like fish I usually do chicken.) Then for dessert I make my own fudge! It's really terrible for you but man it's good. I found the recipe for it on all recipes. com. That's where most of my inspiration comes from! If you want to impress anyone with a nice homemade meal, I would highly recommend this site.
