What kinds of things actually constitute French cuisine?

We always hear about French cooking being really famous, but in the US people are mainly familiar with Italian, Mexican, and Asian foods (although a lot of these are not authentic). But the only things we really hear about that are French are croissants and crepes. So what other kinds of French foods are there?
