French fries issue?

I'm making french fries in oil (of course) but it doesn't get soft inside (it tastes like raw potati), although the outside gets crispy or burned. What is wrong here?

  • Are you going from raw to a high heat? If so you need to blance them at a lower temp first then a higher head when drained abd dry a bit
