Balsamic can be over powering, so be sparing. If you use it in a marinade, temper it with some soy sauce, and a milder vinegar like red-wine vinegar.
If you have a good quality beef steak, it shouldn't need marinade, but with tougher cuts, there are a lot of great ways to marinate.
Another good use for balsamic, summer recipe:
slice good quality garden grown tomatoes, or store bought heirloom varieties
slice similar sized rounds of fresh buffalo mozzarella
stack one slice tomato, one slice cheese
place leaf of fresh basil on top
make a whole bunch
then drizzle with a little good olive oil and balsamic
Balsamic, used in a tiny amount, can wake-up the flavor of ho-hum fresh strawberries.
