I usually weigh out my ingredients, measuring in grams. However, when I adjust seasonings, I don't bother weighing: if it tastes right, it *is* right. And when I make sorbet, I add enough sugar and lemon to get the taste I want; I don't measure what I add. Measuring is the best way to start something, but fine tuning is always done by taste.

When I cook, I tend to eyeball things and taste as I make the meal to see if more flavor is needed. However when I bake, I'll measure and weigh out the ingredients as I find that one can't alter baked goods like you can alter cooking.
