Human beings are evolved to get much of our nutrition from cooked foods, but vegetables are ones that we can also eat raw as part of an overall healthy diet. One of the things about eating "raw foods" is that the ingredients tend to be very whole, nature and in a less processed state with much less of the additives, salt, sweeteners and crap. But we are not meant only to eat raw foods either. Humans are designed to eat a big variety of foods including adequately cooked meat and baked or cooked grains and legumes, and many vegetables are just more digestible cooked.
People who only eat very strict weird raw food vegan diets abound here, and none of them impress me as particularly sane or happy people, and they always smell awful. And their hair is crap.
