If you haven't tried it don't knock it. It has some of the finest meats from the hog, cut up small and set in natural pork jelly. If you like the flavour of ham and the slightly salty flavour of natural gelatin, then you will love headcheese. There is no cheese involved hear and this delicacy originated in Europe many generations ago and they gave it the name used today!
