Hey buddy. There’s a reason it’s cAlled chicken stock. Of beef stock. Or vegetable stock. Cause it should have a hint of that flavor but. But guess what? It doesn’t.
It should only have a bit. If you have a very strong smell then you didn't filter it properly.The smell comes from the fat and the residue in the broth. The more fat and bone marrow you have the stronger the smell. Usually, you chill the stock, filter it and take away the fat. This will drastically reduce the smell and you will get a clear broth. That's why stuff comes in a can don't have that smell because the fat would turn the stuff rancid. This is also the reason you can't keep stock for a long time without freezing it. You really need to filter out the fat to keep the stock.Stock are usually interchangeable but chicken stock has more gelatin so they thicken more, beef stock has more blood so they would tend to be darker, vegetables would turn dark if you use carrots.

Yeah bro the paste. They have amazing flavor. We use them in culinary school. But homemade stocks have a whole new level of taste
I don't disagree but home cooks don't always fave the time to make homemade broths or stock and develop the flavor they want... so the best alternative option works.
