Thanks for the input! Germany is the birthplace of potato salad, so it's not surprising that your German mother taught you her variation, which sounds pretty good.
Oh I forgot about cucumber salad. Yes have to make that. I've never put bacon in it though.My mother's idea of salad is iceberg lettuce with whipping cream. I can't get her to eat a healthy salad to save my life. Butter butter cream, jam, and white "junk bread" as they likes to call it.
Varieties of potato salad made with red skin potatoes tend to be my favorites.

There are a lot of variations of both of those, and then there are some Amish styles which contain eggs.

Yeah, it's interesting because most Amish people are of German descent, but the Amish variations/styles differ a lot from the original German potato salad varieties.
Yeah, the Amish generally have very little in common with today's Germany. lol
