Who all has heard of a cooking method called "Sous Vide"?

sous vide (pronounced sue-veed) is a cooking technique that utilizes precise temperature control to deliver consistent, restaurant-quality results. High-end restaurants have been using sous vide cooking for years to cook food to the exact level of doneness desired, every time. Say for example you like medium rare steak, You would set your device for 129 degrees and leave it in the bath for 1 hour per inch of thickness.

Now you might think that there is risk because of the relative low temperature.. Because you're holding it at a constant temperature for an hour or more, that effectively pasteurizes what ever you are cooking. Once the water bath is done you would take your steak to your grill at say 500 to 600 degrees F, and sear on each side for about 1 to 2 minutes per side.. It creates the most tender and flavorful steak you have ever had. It even turns crappy cuts of meat into something fantastic. Attached are a few images of the device and some finished product.

I use this method almost exclusively because you can drop what ever it is you want to cook in the bath many hours before you want to serve it and the only difference between say an hour or say 4 ours, is its just more tender.. It works for beef, pork, chicken, fish, eggs, vegetables, lots of things.. Granted the temps are different.. Like say for example, minimum temp for Turkey is 145 degrees.. and Say brat's would be about 150 degrees..
