I know most say Granny Smith apples but hear me out:
I'm making my own pie filling, but when I cook down the apples I add spiced rum to the mix. I have no idea what apples are best for this as lots of apples I think of are pretty tart or too sweet, and I happen to think spiced rum is a mix of both. What apple would be good to complement the sweetness of rum?

I forgot to include that I've attempted it before based on a recipe I found and it did not seem to mix well, someone said Fuji and I tried it, it was too much clashing of sour/tart (apple) with sweet/spicey (rum). Trying to find that nice mix. This is a last minute idea for Thanksgiving so I dont know if it will even turn out lol.
I think slightly sour apples are good, it gives it a nice fresh taste. Maybe mix two different types of apples, sour ones and sweet ones, and NOT mix them but rather keep them separate, so it gives it a nice surprise where each bite has a different nuance.
Rum i don't know. i am not rum guy. I would certainly use brown rum. And maybe even add sone artificial rum flavour, its a much more concentrated flavour.
Yes, but i would make some tests before, maybe making some muffin style mini pies. Maybe its not even worth the effort, cause flavours blend together too much.

I've never made a pie, but my impression was that Granny Smiths are used because other apples don't bake as well. I realize you probably don't have time to experiment much, but long-term, it'd nice to have a reference of what apples work, and how well. You might want to give Braeburns a try; there's a lot of Granny Smith in them, but they taste quite different. No idea how they'd bake up.

Use northern spy, courtland or if you can find them the New Zealand braeburn. All chefs will tell you granny smith is the go to Apple for pies.

Personally I'd go with a Bramley Apple and a straight dark rum, mixing the apples, rum and a couple of spoons of sugar before making the pastry, that will give the filling a chance to work together before baking.

Use Granny Smiths they are more tangy. Use Myers Dark Planter's Punch Rum, Myers Gold Rum, Capt. Morgan's Brown Spiced Rum or Mount Gay Gold Rum.
