@Massageman Have you actually made an alfredo sauce? It tends to be finicky about how much you need to add for each ingredient.
Many times. It's cheaper for me to make than to buy, too.2 T butter2 T flour2 1/2 c milkCheese, shredded- maybe 2 cups or to taste (we found a six-cheese Italian blend we like). Seasonings.Melt butter. Add flour, whisk about 15 seconds or so. Take from heat, add 1/2 c milk and whisk like crazy about a half minute. Return to heat. Add remaining milk, bring to a simmer. Start adding cheese, a little at a time, whisking as you hold the simmer, allowing it to melt into the sauce. Add seasonings. I usually add 1 t salt, 1/2 t pepper, a pinch of red pepper flakes, and about 1/4 t paprika, but you can do your own thing as well. Depending on ratios and kind of cheese used, this also makes a great base for Broccoli Cheddar Soup, as good or better than at Panera. Mangia, mangia!
