It will depend on the person (what they have presented is a caricature of a specific type). I would suspect that most of us would at least realise that some of those questions are unlikely to get wanted outcomes (especially 'why are you single', which is (or at least should be) a known minefield).
Based on my understanding, men do that if they are being very deceptive. There are men (and women) who are like that. They don't want to say exactly what they mean because they consider dating to be some kind of competition, and their date is the prize.Normally, however, men are relatively simple and are often very straight forward. Most of the questions the guy asked in the video seem to come off as rude and clearly disingenuous, but other questions are just clearly innocent complements.
It's exagerated. For example at 0:30 it could just be a genuine compliment with no other thoughts behind it. But it's not entirely wrong.

It varies from person, to person. You can't generalize this kind of thing.
