If a guy shows he cares about you in every way, but constantly says he "doesn't care about anything" and puts on an "IDC" act, what does this mean?

Guys, do you put up a front around girls to convince them you don't care? If so, why? I'm genuinely curious why some guys think it's better for a girl to think they don't care about them than to just allow themselves to be vulnerable and say they care.

For example: You're great friends with a girl and are always making sure she's okay, going out of your way to do things for her, always want her to be happy when she's with you, but if the topic of your feelings towards her comes up, you convince her you don't care about "anything" or "anyone" and brush her off. Would you do this around a girl you like so that she didn't catch on that you liked her? Some other reason?
