How do I lose then keep off 20 pounds?

I'm 5'8, 20 years old, and around 200lbs.
I really want to get down to 180 or less but I find it almost impossible. I eat only one meal a day and maybe a snack or two late at night. I avoid soda, because it causes acne on my face. I also attend the gym once a week.
It just really makes me depressed to think I can't shed these lbs. I dont think I look particularly bad but I do want to look better before my 21st birthday in September.
Any tips?
