  • Usually vegetable oil. If it were something like lard the fries would be sticky in fat once they got cold.

  • Due to popular health opinion, McDonalds has started to use oil that's free of trans fat. However, they discovered that not using beef fat makes their fries taste, well, bland.

    So now they fry their fries in trans-fat-free oil, but add beef fat to it under the guise of "natural flavor".
