In the professional psychology world, the answer is: when they are at their best, the most capable, competent, confident, feeling good about themselves, contributing to the world, and others are enjoying and respecting them in that moment. That's when their partner, should they be present to witness it, are most impressed and attracted to them.
I guess my simple (r) answer is: when they're either the most playful and fun, or the most vulnerable and really entrusting in me. Either one, both, make me feel privileged to be in their inner circle.
When they panic or get flustered about something they've said that I may have taken the wrong way, or when they try to explain themselves frantically.
I know it is weird, I don't enjoy my partner feeling bad or guilty, nor do I wish for my partner to worry about my affection towards them at any point, not at all.
I simply enjoy these kinds of incidents because they feel very genuine to me. Seeing my partner lose composure or even experience momentary dread thinking they may have upset or let down someone they love, feels a thousand times more genuine to me than them saying they love me.
It's very endearing, perhaps in a bit of a schadenfreude way, but still. It assures me that I'm someone they care about greatly, not someone they are indifferent towards.
