Questions: Food & Beverage

I'm trying to gain muscle but it's hard for me to hit even 2,000 calories. I'm 125 pounds and if I don't work out I usually eat like 1,500 calories and feel completely satisfied. Today I ate 1968 and only because I had a recovery drink with 250 calories in it after working out hard. I know it's easy to pack in the calories if you drink a lot of soda or have a bunch of junk food. But eating clean and hitting 2k calories a day is hard to me. :( I had oatmeal, boiled egg, milk, banana, 4 ounces of chicken, mixed veggies and canilla enriched rice and an enormous PBJ. I had 4 tbsps of peanut butter. that was like 700 calories. 420 just from peanut butter. but if I wouldn't have had the 250 recovery drink i would have been at 1750...
