I'm interested in a co-worker I've known for almost a year and a half. She knows I like her and twice or 'thrice' she has rejected me. However, I have co-workers who jokingly call her my girlfriend and push me to still pursue her and I have a housemate who is pushing me to continue to pursue her.

This co-worker knows I'm a writer and has given me feedback on a short story w/characters that are obviously based on her and I; a sexually explicit romance that I'm working on expanding and looking to publish someday.

Also, the others co-workers and housemate made it a point to note that 'my crush' took out time after she was off to bring me some cheesecake she made after a conversation her and I had earlier in the shift. 'Why didn't you bring any for anyone else?' I caught others joking with my crush.

She, the crush, only seems to answer texts when we have little arguments (e. g. I felt she wasn't empathetic) yet, she doesn't answer when I'm giving her 'thoughts' about my little fantasies.

It's confusing me because a woman, particularly a co-worker, probably wouldn't be too keen on having a guy write fictional stories about her if she wasn't interested, and probably wouldn't take out time to bring her cooking to a guy after her shift. (Btw, I thought the cheesecake was 'okay.' It needed 'something,' and I told her so).

I also think this crush of mine likes the attention, but doesn't want the relationship. I actually asked her months ago about said attention and she told me something to the effect that she doesn't not like the attention.
