I meant "spicey" as in food that has lots of spices. Doesn't necessarily have to be hot like pepper hot but they can be. They usually are tho. Like Curry, Kebabs, Tacos, Mexican Mole Sauce, Jollof Rice, Satay, Nasi Lemak, Jamaican Pattie or etc. It's food from South Asia, Southeast Asia (closer to India), Middle East, Africa, Carribbean and South America that has lots of those. I really love those. I wish my country is more familiarized with more spices actually.

My mom is 69 and seems to me that she acts immature.

Here's some of the things she's done, not listing everything because it's a lot.

• Sometimes if I help her or give her something she says things like "I think you love me", "I think you like me", or "What are you trying to get?" and "What do you want from me?".
• Sometimes she fixes drinks (like teas) in a large container and gives me a size that you match a medium size or a small size cup at a fast food place like burger king, and then tells me that should last me 3 days or at least a week. While she multiple jars of it.
• A few weeks ago I asked her if she could take me to the doctor because I wasn't feeling well and was hurting and she got made a sigh and said she'll take me in a few hours and said she'll check to see if her sister could take me. But when she needs to go she asks others and no one hesitates.
• This morning I was making breakfast at 6 AM and she comes out her room into the kitchen and stares at me, and I asked her whats wrong? And she goes to the bathroom and slams the door ignoring me.
• She sometimes leaves the toilet seat with water, urine, and what ever some type of skin crust thing and it's so annoying. I told her once but she got upset when I told her about it, and I told her nicely.
• Sometimes I'll explain to her about me looking for a job and my plans on saving up to move out and she says "You're trying to leave me?" or says "Can I come live with you when you get a house?" but at the same time when she gets upset about something she always says "You need a place of your own?" Which I agree with but she switches.
• Whenever I'm explaining something to her or having a conversation she always cuts across me when she thinks she knows something without letting me finish.

I always see videos of messed up shit there. Like only that shit would happen there.

People crying because their kids have to wear masks. All the extreme protests, choice of presidents. All the Karens. Crazy delusional psychos. People exercising their ‘rights.’

There’s some extremely smart people there, but most Americans are stupid. School shootings etc. Just a stupid country. Shitty cancer causing food. They give guns to kids. Stupid pronunciation of words They don’t even have free healthcare like the UK. The UK isn’t perfect. But much better than the US. I swear everything bad comes from there.

When I talk about Americans I really mean the USA. I know some cool Canadians. Americans are often so proud, why? 🤣 because you can kill whoever you like?

When I was a kid I used to love America because of all the cool TV shows.

Introduction
So some years back I became really sick with crohn's disease. Since then I have been waiting my food intake really carefully in order to reach a healthy weight (I needed to gain). My diet consisted of lots of proteins and fats and because of old habbits carbs (in bread and stuff). My sugar intake was dialed down to nutella in my breakfast, honey in my tea and yoghurt and fruits.

Currently it's a bit different but it's still based on what it says on top. The difference is I consume a little bit more sugar since I started baking which I really love (it's my only form of candy and I try to limit my sugar intake as much as possible). I also started eating more rice instead of only potato. I try to keep things varied.Right now my meal plan looks more or less like this:
For breakfast
bread with peanut butter+ bread with Nutella+ a glass of milk or instead of bread it's yoghurt with honey and fruit (but mostly the first one).

My lunch
looks about the same but I recently introduced oatmeal for more variety (I add honey and fruits) and I'm thinking about adding a vegetable omelette in the rotation to increase my vegetable intake. (maybe also for breakfast)

Dinner
Mostly consists of meat (almost exclusively chicken and pork) with potato and vegetables or rice with meat and vegatables. Sometimes I switch the meat with fish but fish is expensive for a poor student like me so it doesn't happen a lot. Keep in mind most of the chicken I eat is chicken breast. I also sometimes eat ready made lasagna or pizza (when I don't feel like cooking). I was thinking of occasionally replacing the meat in my rice dishes with eggs.

Also keep in mind that I live in a EU country which means my food is probably healthier by default than most food in the USA since the EU has stricter food laws. I also know there are healthier ways of eating but I also want to eats things I like (while still being healthy).

Maybe you have suggestions to increase the amount of vegatables?
