What happened after her high interest?

So I matched a girl on Tinder last summer. We started chatting via Insta, and also scheduled a date in the beginning of July. Sadly she cancelled because she told me she wasn't feeling the vibe anymore and didn't want to lead me on. I didn't make much of it and let her be.

Fast forward to last week. I see her again on Tinder and like her. A bit later I match her and send a message. She was very interested this time, and moved to instagram almost immediately. She then proceeded to give me her number, and was very interested over text as well.

We scheduled a date, and at some point she even told me she was amazed that I still wanted to go with her since she cancelled last time. At some point she even told me she was glad I didn't find anyone in the meantime.

The day before the date she texted me asking if I had plans during the evening, because she didn't have anything to do so we could also meet her that night. I told her we could go get dinner, and so we did.

On our date itself she immediately started by telling me she was super nervous. It was very obvious during our date as well, almost to the point where she could barely make eye contact. After dinner and a few drinks I walked her back to her apartment and went home. Even before I got home I got a message from her appologizing because of her being so nervous, and that she wasn't ready to open up completely yet, so that she couldn't proceed going further.

I told her not to worry about it, and that she could always contact me if she felt better, and wanted to see where things could lead eventually. I haven't texted her since, and haven't heard from her since.

She did mention in our texting conversation that she was dating someone before but that he started having doubts and that it ended, and then also her grandmother died 2 weeks ago, so she had some rough weeks.

I'm assuming she really isn't ready to date yet, but am still confused why she would be so super interested over text. Any thoughts?
