I think I would keep it simple but fun and flirty
Go for a drink and maybe a walk if the weather is good

Then, we'd go to a place I know of where the gas company is putting in new gas lines and we could sit and watch them dig holes in the ground!! It could also be just a dinner on a ferry going from one country to another
