I’m thinking Mexican tonight. Can never go wrong with Mexican

Chicken enchiladas, Spanish rice, and Mexican style cornbread

Carne Asada tacos with Mexican Street corn salad

I think the chicken enchiladas sound perfect! I had a taco and nachos tonight too. Black bean soft taco and beefy nacho scoops. But I think the beef hurt my stomach a bit so now I know why I don't eat taco meat, grease.
