In the UK, NY strip is known as sirloin. There's more marbling on a ribeye because it comes from a part of the cow that does less work than the NY strip making it the superior cut.

Ribeye for sure, NY Strips are unpredictable more often then not tough yet flavorful , rib eye's are always very flavorful and extremelh tender.
