When I was in a relationship we always gifted each other experiences for Christmas an birthdays, such as concert tickets, plane tickets, a spa day, a hockey game, or something like that.

A piece of tech or something he can get himself…. but something fun the two of you can do together is probably something he wouldn’t think of.
