They celebrate Easter but none of them eat chocolates. One watches her weight religiously. The other two don’t drink or eat cake or chocolate.

Hmm that's tough, Easter gifts without chocolate or sweets. A few ideas that might work:
- For the diet conscious friend, maybe a nice water bottle or shaker bottle for protein shakes? Or some healthy protein bars?
- For the vegans, some nice snack packs of nuts, dried fruit and crackers could be good. Trail mix style.
- Gift baskets with like tea/coffee, jam/honey and fancy crackers or flat breads might work too for the vegans.
- Body/bath products are always a safe bet if they're not too "girly". Like soap, lotion, bath bombs.
- A gift card for a nice, healthy cooked meal could be cool too so they don't have to cook. Like a local salad place or vegan restaurant.
- Flowers or a nice plant are simple but thoughtful.
I'd include a little Easter card just to make it festive too. But yeah, avoiding the standard sugar stuff will be good for them. Hopefully some of those ideas work!
Stuffed animals are always nice.
