Why did America celebrate independence day yesterday when the conflict didn't end until 1783 when the French saved them?

The signing of the treason sheet did not create a new country. That came about later when Britain decided it needed to divert resources to other parts of the empire and the Americas weren't worth the effort.

So why do Americans celebrate the 4th and not the end of the disagreement?
