The Declaration of Independence was actually signed by the members of the Continental Congress on July 2, 1776, but wasn't announced to the public until 2 days later, on July 4, 1776, after enough copies were printed so they could be posted around the colonies.
Simple put, it makes sense to celebrate the most important date, not when Cornwallis surrendered at Yorktown.
The French do a similar thing, celebrating 14 July as their independence day because it's the day the Bastille was stormed, even though the French Resolution went on for several years after that.
