If it were simply for a nice vacation, I'd probably pick one of the Nordic countries in the summer, and really enjoy some cycling along with lots of forest bathing.

Neighbors went there about a year ago, said it was an amazing trip. They have teenage children that could really appreciate it. I was thinking Norway or Finland myself.
