Well, archetipally speaking, cowboys represent a bunch of qualities indispensible to a hero. Independence, of movement and of resources, self-reliance, dexterity (building houses, fences, etc.), strength, persistence and freedom.
In the wilderness of the west or the country life, a man needs to become all of these things or he'll be crushed by the wilderness around him. There's probably many smaller qualities related to the ones I already mentioned which I forgot like resourcefulness so you probably get the point already.
And all of these qualities are attractive in and of themselves, aren't they? Even if we're not talking about sexual attraction, a free, resourceful and strong man is a sight to behold and an inspiring one at that, wouldn't you agree?
