I’m not sure if I’m overreacting but she doesn’t say/respond I love you in our texts anymore. Does it mean she’s interested in someone else?

Most of the time, those "I love you" sentence have absolutely no meaning whatsoever.

Mainly in the US where people say those 3 words through and through without giving it a second's attention as to the real meaning behind it, it has lost all value.

People say it when they leave home, when they come back, on the phone and anywhere in between. It is just like "bless you" after someone sneezes. Do you really bless that person that sneezes? Of course not. You just say it because it is a custom and you grew up saying it just because anyone else said it.

Now, as to your question, of course it can mean that she lost interest but it could also mean that she does not deem it necessary any longer to say it. You should ask her for her reasons before making an assumption.
