I feel like my cousin doesn't respect my time as she keeps texting too much what should I do?

She lives in Canada so there is a 5 hour time difference with the UK. But last night it was 11.30pm at night I replied to her texts and she just phones me thinking I want to talk honestly if I did that so late at night she would tell me off. She's a 43 single women never been married so I'm thinking that's why she over texts me a lot.
