Girl can only go on dates on the weekends?

She has kids so date attempt number one was her baby sitter fell through. Now this week we tried and she's sick. This just seems like it's turning into another textathon and we haven't even met yet. I'd think she could make an exception and make some time available during the week.

When you have children, it is not always very easy to make exceptions just to please someone you have never actually met in person. There are a lot of constraints and if she is a good mother, then she will ensure that every aspect of her absence will be covered and she is not willing to take any risk, which is understandable.

You could also go on a date at her place to make things easier on her and just be satisfied with a a meal she prepared or bring some take out/take away. Once the children are in bed, there is no difference between a date in a restaurant and a date at home, right? Unless you have something very different in mind...

Why are you dating a woman that has kids? Find one that doesn't have kids. Her kids are her priority and it's obvious she's in no condition to be dating.
