It's unusual but I wouldn't call it weird. If the two of you are attracted to each other, there's nothing wrong with you two dating. Just be sure both parents are aware of what you're doing, and if they have a problem with it, you should reconsider.

Parents said they're fine with it, apparently she asked them about it before asking me out. I find myself very attracted to her so I said yes.

A bit unusual but it happens. The problem arises when one or the other couple breaks up. If you break up with his daughter, but your mother keeps seeing his boyfriend, things could get awkward. OTOH you are all adults and should be able to handle it. If she wants to go out with you, then do it.
