How do I overcome my fear of texting?

Why would you offend her? Like what do you think you are going to or might say that would? You might be overthinking what a girl is going to find offensive. Just keep the conversation light for starters. It doesn't need to get really deep in the beginning. That is the time where you wanna get to know her interests and what she is all about. There shouldn't be an opportunity to offend her. Talk about what she is into and stuff like that. Let her lead the conversation if you must.

If someone gets offended by you talking normally and respectfully to them, then you should be glad to be rid of them. Just be polite and what happens, happens.
