I went on a double date with her and a couple of friends, and she would interrupt me when I would talk. Despite this, she wants a solo date with me.

Only you can decide. Is she doing this because she doesn't respect you, or is it just a bad habit. Some perfectly nice people have behaviors that are annoying, but they will try to change them if asked.

How do you feel about her? Do you like her enough to want to get to know her better? If she interrupts you, you could try being gently assertive. If she becomes defensive, then drop her.
